It’s amazing how many different snacks you can make with vegetables. Today we will tell you 20 simple recipes for an original treat – pickled beets. It is always available at any time of the year, but it is in the summer that it is the most delicious and juicy!
1. Pickled beets of instant preparation
For marinating, it is better to use enamel, ceramic or glassware.
You will need: 500 g boiled beets, 2 cloves of garlic, 2 tbsp. olive oil, 50 ml vinegar, 0.5 tsp. ground coriander, 0.5 tsp. ground black pepper, 8 g of salt.
Preparation: Grate beets, squeeze the garlic through a press. Mix everything, add spices, salt, oil and vinegar. Stir and refrigerate for 2 hours.
2. Beets marinated with onions
If you want to roll up pickled beets for the winter, sterilize them in boiling water for 7 minutes.
You will need: 2 kg of boiled beets, 3 onions, 1 glass of apple cider vinegar, 1 tbsp. vegetable oil, 2 tbsp. salt, a pinch of sugar, 1 tsp. coriander beans, 10 allspice peas, 4 bay leaves.
Preparation: Chop beets and onions, add spices, salt and sugar. Put the vegetables in a jar, cover with boiling vinegar, add a layer of oil on top. Cover and refrigerate for 2 hours.
3. Sweet pickled beets with mustard
Do not store canned beets for too long.
You will need: 700 g boiled beets, 1 tbsp. sugar, 1 tsp. salt, 50 ml vinegar, 3 allspice peas, 1 tbsp. dry mustard seeds, 2 cloves buds, 0.5 tsp. ground cinnamon, 2 glasses of water.
Preparation: Chop the beets as you like. Boil water, add salt, sugar and spices. Boil for 7 minutes, pour in vinegar and remove from heat. Put the beets in jars, cover with hot marinade, sterilize for 10 minutes and roll up.
4. Pickled beets for the winter
Prepare a couple of jars of pickled beets for the winter!
You will need: 2 kg of beets, 1.5 cups of water, 150 g of sugar, 2 tbsp. salt, 150 ml of vegetable oil, 80 ml of vinegar, 2 bay leaves, 5 black peppercorns.
Preparation: Peel the beets, cut into small cubes and put in a saucepan. Add vinegar, water, oil, spices, salt and sugar. Boil for 2 hours over medium heat, put in jars and roll up.
5. Beets marinated in lemon juice
Beets are brighter and more beautiful with lemon juice.
You will need: 1 kg of boiled beets, 5 sprigs of dill, juice of one lemon, a pinch of sugar, 1 tbsp. salt, 5 black peppercorns, 300 ml of water.
Preparation: Chop the beets, add chopped herbs, sugar and put everything tightly in sterilized jars. Boil water, add black pepper and salt. Boil for 3 minutes, add lemon juice and fill the jars to the top. Cover with lids, sterilize for 10 minutes and roll up.
6. Korean pickled beets
An appetizing appetizer that goes well with many dishes.
You will need: 500 g of beets, 1 onion, 3 cloves of garlic, 5 sprigs of dill, 1 tbsp. sesame seeds, 1 tsp. ground coriander, a pinch of ground red pepper, 1 tbsp. soy sauce, 2 tablespoons apple cider vinegar, 2 tablespoons vegetable oil, 8 g of salt, 8 g of sugar.
Preparation: Sodium beets on a grater, add spices, salt, sugar, chopped herbs and garlic. Fry finely chopped onions in oil, add to the beets along with hot oil. Pour in the vinegar, sauce, sesame seeds and stir. Cover and refrigerate for an hour.
7. Pickled beets with nuts
Nuts can be crushed in a mortar or chopped in a blender.
You will need: 1 kg of beets, half a glass of walnuts, 1 tsp. rosemary, 1 tsp. thyme, 1 tablespoon wine vinegar, half a glass of olive oil, 2 tsp. salt, a pinch of sugar.
Preparation: Rinse the beets, dry them and put them in a preheated oven for 1.5 hours. Cool, peel and grate. Combine oil, vinegar, spices, chopped nuts, salt and sugar. Pour the marinade into the beets, stir and refrigerate for 2 hours.
8. Whole pickled beets
Choose root vegetables up to 5 centimeters in diameter.
You will need: 1 kg of small beets, 50 g of salt, 1 tbsp. sugar, 50 ml vinegar, 2 bay leaves, 2 cloves buds, 4 allspice peas, 1 liter of water.
Preparation: Boil the beets until cooked, peel and put in a prepared container with spices. Pour in boiling water and leave under the lids for 15 minutes. Drain the liquid into a saucepan, add sugar, salt and vinegar. Bring it to a boil, fill the cans to the top and roll up.
9. Pickled beets with citric acid
Without vinegar, pickled beets are even tastier!
You will need: 1 kg of boiled beets, 50 g of salt, 80 g of sugar, 20 g of citric acid, 2 bay leaves, 4 allspice peas, 1 liter of water.
Preparation: Boil water, add salt, sugar and citric acid. Add chopped beets, spices and boil for 10 minutes. Put everything in banks and roll it up.
10. Pickled beets for vinaigrette
Such pickled beets can be used for any other salads.
You will need: 500 g boiled beets, 2 tbsp. apple cider vinegar, 15 g salt, 1 tsp. sugar, 2 bay leaves, 5 black peppercorns, 3 glasses of water.
Preparation: Cut the beets and put them in prepared jars. Boil water with salt and sugar, add spices and boil for 10 minutes. Pour in hot marinade, vinegar, roll up and wrap up with a warm towel for a day.
11. Beets marinated for cold borscht

You will need: 1 kg of beets, 3 tbsp. sugar, 1.5 tbsp. salt, 120 ml of vinegar, 3 black and allspice peas, 3 bay leaves, 1 liter of water.
Preparation: Peel the beets, cut and boil for 30 minutes. Drain and put in prepared jars along with spices. Boil water with salt, sugar, add vinegar and fill the jars to the top. Roll it up, turn it upside down and wrap it up with a warm towel.
12. Beets marinated with cabbage
A beautiful appetizer can easily be placed in the center of the table.
You will need: 500 g of beets, half a head of cabbage, 50 ml of vegetable oil, 80 ml of vinegar, 1 tbsp. salt, 1 tbsp. sugar, 5 black peppercorns, 2 bay leaves, 0.5 tsp. ground coriander.
Preparation: Chop cabbage, grated beets. Mix everything and tamp it tightly into the jars. Boil water, add spices, salt and sugar. Remove from heat, add vinegar and add vegetables. After 24 hours, the snack will be ready.
13. Pickled beets with cauliflower
Cabbage and beets are very crispy.
You will need: 500 g of beets, 500 g of cauliflower, 4 cloves of garlic, 1 tsp. dry dill seeds, 2 bay leaves, 2 tbsp. vinegar, 1.5 tbsp. salt, 1 tbsp. sugar, 1 liter of water.
Preparation: Cut the beets, divide the cabbage into small inflorescences. Place the spices, coarsely chopped garlic and prepared vegetables into the jars. Boil water, add salt, sugar and vinegar. Pour boiling marinade into jars, sterilize for 10 minutes and roll up.
14. Pickled beets with tomato juice
Use only sweet beets.
You will need: 1 kg of boiled beets, 2 cups of tomato juice, 2 tbsp. vegetable oil, 3 tbsp. vinegar, a pinch of sugar, 2 tsp. salt, 5 black peppercorns, 200 ml of water.
Preparation: Place bay leaves, black pepper and chopped beets in jars. Boil water with tomato juice, add salt, sugar and boil for 7 minutes. Pour vinegar, boiling marinade into jars and roll up.
15. Beets marinated with honey and spices
A very tasty and original recipe for pickled beets that has every chance of becoming your favorite!
You will need: 1 kg of boiled beets, 2 tbsp. honey, 80 ml of vinegar, 50 g of salt, a pinch of citric acid, 2 bay leaves, 5 sprigs of parsley, 4 cloves of garlic, 1 tsp. dry dill seeds, 0.5 tsp. ground coriander, 300 ml of water.
Preparation: Boil the beets until tender, cool, peel and cut. Place the parsley, coarsely chopped garlic, spices and beets in jars. Boil water with salt and citric acid. Pour the marinade into jars and sterilize for 10 minutes. Add honey, vinegar and roll up.
16. Pickled beets with horseradish root
Both raw and boiled beets will do.
You will need: 500 g of beets, 300 g of horseradish root, 2 tbsp. vinegar, 0.5 tsp. ground coriander, 1 tbsp. sugar, 0.5 tsp. salt, 1 glass of boiled water.
Preparation: Peel, grate beets and horseradish root. Add sugar, salt, vinegar, coriander and water. Divide the mass into sterilized jars, close the lids and store in the refrigerator.
17. Beets marinated in vinegar and honey
Serve aromatic pickled beets with mint and lemon slices.
You will need: 500 g beets, 3 tablespoons olive oil, 200 ml rice vinegar, 1 star anise, a couple of cardamom seeds, 1 tsp. thyme, 1 tsp oregano, 10 g sea salt, 1 tbsp. sugar, 2 tbsp. honey, half a cinnamon stick.
Preparation: Combine honey, oil, vinegar, spices, salt and sugar. Add the chopped beets and refrigerate for an hour.
18. Beets marinated with black currant
Shake the jar periodically, then more food will fit into it.
You will need: 3 beets, 1 cup black currant, 0.5 tsp. citric acid, 1 tbsp. salt, 1 tbsp. sugar, 40 ml of vinegar, 2 bay leaves, 3 allspice peas, 500 ml of water.
Preparation: Peel and cut the beets, rinse the currants thoroughly. Put spices, beets and currants in prepared jars. Bring water to a boil, add sugar, salt and citric acid. Pour hot marinade into jars and sterilize for 10 minutes. Add vinegar and roll up.
19. Pickled beets with hot peppers
If the beets are not juicy enough, add boiled water.
You will need: 500 g of beets, 1 chili, 2 bell peppers, 3 cloves of garlic, 0.5 tsp. ground coriander, 3 allspice peas, 20 g salt, 1 tsp. sugar, 50 ml of vinegar.
Preparation: Grate beets. Peel both types of pepper from seeds and chop in a blender, squeeze the garlic through a press. Mix everything, add spices, salt and sugar. Sterilize for 10 minutes, pour in vinegar and roll up.
20. Pickled beets in Georgian style
A spicy appetizer with pickled beets, which goes well with meat.
You will need: 1 kg of beets, 1 onion, 1 hot pepper, 50 g of sugar, 1.5 tbsp. salt, 40 ml of vinegar, 4 cloves of garlic, 50 ml of vegetable oil, 1 tbsp. peeled sunflower and pumpkin seeds, half a bunch of cilantro.
Preparation: Grate beets, add chopped cilantro and hot peppers. Add sugar, salt, vinegar, squeeze the garlic through a press. Finely chop the onion, fry and pour into the vegetables along with the oil. Pour in the dried seeds, cover and refrigerate for an hour.
