The classic charlotte is baked in the oven, but what to do if for some reason this is not possible? Just for this occasion, we want to share with you 12 great recipes on how to cook a fluffy and delicious charlotte in a pan!
1. Charlotte with apples in a pan
Let’s start with the easiest and most traditional option.
You will need: 120 g sugar, 80 g flour, 30 g butter, 3 eggs, 2 apples, 1 tbsp. vegetable oil, 0.5 tsp baking powder.
Cooking: Beat eggs with sugar in a mixer until fluffy. Add sifted flour with baking powder and mix. Lubricate the pan with a mixture of two oils, put the apples cut into slices and fill them with dough. Cook the charlotte under the lid over medium heat for about 10-15 minutes. Turn it over with a plate and cook for another 7-10 minutes.
2. Charlotte on kefir in a pan
A very convenient and quick recipe for charlotte from simple ingredients.
You will need: 2 apples, 2 eggs, 1 cup flour, 1/2 cup sugar, 1 cup kefir, 0.5 tsp. baking powder.
Cooking: Beat eggs with sugar, add kefir and then – sifted flour with baking powder. Lubricate the pan with oil, lay out randomly chopped apples and pour over the dough. Cook the charlotte under the lid over low heat for about 20 minutes. Flip carefully and cook for another 7-10 minutes.
3. Charlotte with milk in a pan
Milk is suitable both fresh and slightly sour – both options are good.
You will need: 70 ml milk, 2 eggs, 70 g sugar, 220 g flour, 1 tsp. baking powder, 2 pinches of vanillin, 50 ml of vegetable oil, 2 apples.
Cooking: Whisk eggs with sugar and vanilla. Add butter and milk and beat again. Then add the sifted flour and finally the baking powder. Grease a frying pan with oil and put chopped apples into it. Fill them with dough and cook the charlotte for about 20 minutes on minimum heat. Turn over and cook another 5-6 minutes.
4. Charlotte without baking powder in a pan
The usual recipe with slaked soda will save if there is no baking powder for the dough on hand.
You will need: 70 ml of kefir or milk, 220 g of flour, 2 eggs, 70 g of sugar, 1 tsp. soda, 1 tsp vinegar, 50 ml vegetable oil, 2 apples.
Cooking: Whisk the eggs, sugar and kefir with a whisk. Add oil and beat again. Then add the sifted flour and at the end – soda slaked with vinegar. Finely chop the apples and mix them into the dough. Lubricate the pan with oil, pour out the dough and cook the charlotte for 15-20 minutes over low heat under the lid. Then carefully turn over and bake for another 5-7 minutes.
5. Charlotte on yogurt in a pan
Especially tasty charlotte is obtained on thick Greek yogurt without additives.
You will need: 3-4 apples, 2 eggs, 100 g flour, 200 g yogurt, 0.5 tsp. baking powder, sugar or substitute to taste.
Cooking: Whisk eggs, yogurt and sugar with a whisk. Add the sifted flour with baking powder and then finely chopped apples. Pour the dough into a greased frying pan and bake the charlotte for 15 minutes over low heat. Flip carefully and cook for another 10 minutes.
6. PP charlotte with cottage cheese in a pan
Low-calorie charlotte recipe without sugar and wheat flour.
You will need: 3-4 apples, 2 eggs, 1 tbsp. honey, 1 tsp baking powder, 350 g cottage cheese, 5 tbsp. cornmeal, 0.5 tsp cinnamon.
Cooking: Blend all ingredients except apples until smooth. Then add diced apples. Pour the dough into a greased frying pan and cook the charlotte under the lid for 20 minutes over low heat. Turn it over with a plate and cook for another 5 minutes.
7. Charlotte with semolina in a pan
Semolina makes the dough more loose and tender – be sure to try it!
You will need: 200 g apples, 1 egg, 120 g sugar, 150 g flour, 150 g semolina, 240 ml kefir, 1 tsp. baking powder.
Cooking: Mix kefir with semolina and leave for half an hour. Beat the egg with sugar and combine with kefir. Add the sifted flour with baking powder and mix the dough. At the end, add diced apples. Pour the dough into a greased frying pan and bake the charlotte over low heat for 15-20 minutes. Then turn over and bake for another 7-10 minutes.
8. Charlotte with jam in a pan
For a more familiar variation, take apple jam, and for a change – any thick one.
You will need: 200 g flour, 1 cup jam, 4 eggs, 70 g sugar, 5 g baking powder, 10 g salt.
Cooking: Whisk eggs with sugar and salt until foamy. Add sifted flour with baking powder. Then add jam and mix the dough. Pour it into a greased frying pan and cook the charlotte for 15-20 minutes over low heat. Turn over and cook for another 5 minutes.
9. Charlotte with caramelized apples in a pan
It is more convenient to cook such charlotte in a pan, and not in the oven.
You will need: 200 g flour, 180 g sugar, 3 eggs, 8 g baking powder, 20 g butter, 250 g apples, 60 g brown sugar.
Cooking: Beat eggs with regular sugar until foamy, add flour with baking powder and mix. Peel the apples, cut into thin slices and lightly fry in butter in a pan over medium heat.
Add brown sugar and continue frying until caramel forms and liquid evaporates. When the apples are caramelized, fill them with dough, reduce the heat and cook the charlotte under the lid for about 15 minutes. Turn the cake over and cook for another 10 minutes.
10. Charlotte with a pear in a pan
Delicious charlotte can be prepared with any fruit. For example, take a pear!
You will need: 1 egg, 1 pear, 160 ml milk, 40 ml vegetable oil, 150 g flour, 60 g sugar, 8 g baking powder.
Cooking: Beat the egg with sugar, add milk and butter, and then flour and baking powder. Cut the pear into slices and put it in a greased pan. Pour over the dough and cook the charlotte over low heat for about 20 minutes under the lid. Turn over and cook another 5-7 minutes.
11. Chocolate charlotte in a pan
Add some more grated chocolate if you like.
You will need: 120 g sugar, 80 g flour, 30 g cocoa, 3 eggs, 2 apples, 0.5 tsp. baking powder.
Cooking: Beat eggs with sugar until foamy. Add the sifted flour with cocoa and baking powder, and knead everything until smooth. At the end, add peeled and diced apples. Lubricate the pan with oil, pour out the dough and cook the charlotte for 15-20 minutes over low heat under the lid. Turn over and cook for about 7 more minutes.
12. Charlotte with apples and raisins in a pan
And for flavor, we suggest adding a little more chopped nuts!
You will need: 70 ml milk, 2 eggs, 70 g sugar, 220 g flour, 1 tsp. baking powder, 2 apples, 1 handful of raisins, 1 handful of walnuts, 50 ml of vegetable oil.
Cooking: Beat eggs with sugar, add milk and butter, and then add the sifted flour with baking powder. Pour raisins with boiling water for 10 minutes and dry. Peel and cut apples into cubes. Roast the nuts in a dry frying pan and chop them with a knife.
Stir the filling and put it in a greased frying pan. Pour everything with dough and cook charlotte for 15-20 minutes over low heat. Then turn over with a plate and cook for another 7-10 minutes.
